Ingredients:
- 1 new small potato (about 1 "diameter)
- 1/2 red pepper or green pepper, seeded and sliced
- 1 tablespoon olive oil
- 2 tablespoons dark beer
- 1 clove garlic, minced
- 1/4 tsp. ground cumin
- 1/2 tsp. hot smoked paprika
- 1 tsp. red wine or white vinegar
- Salt to taste
Preparation:
1. Boil potatoes until tender, about 10 minutes. Drain and
mash.
2. Using a blender or food processor, grind together the
garlic, cumin, pepper and paprika. Add the vinegar.
3. Heat the olive oil over medium-high heat.
4. Add the potatoes and peppers and potatoes brown.
5. Add beer and cook until almost dry.
6. Add the vinegar spice mixture, being careful to cover all
the potatoes. Add salt to taste and serve.
