Spanish potatoes or patatas bravas

This recipe for Roast Potatoes is based on a Spanish recipe, one of the best and most famous recipes of Spanish cuisine. The surprising element is vinegar, which gives the dish a wonderfully bright flavor. Furthermore, the dark beer can also add depth to the dish. Any dark beer will work, but if you can get a good dark beer will be perfect. Potatoes should be clearly hot.

Ingredients:

  • 1 new small potato (about 1 "diameter)
  • 1/2 red pepper or green pepper, seeded and sliced
  • 1 tablespoon olive oil
  • 2 tablespoons dark beer
  • 1 clove garlic, minced
  • 1/4 tsp. ground cumin
  • 1/2 tsp. hot smoked paprika
  • 1 tsp. red wine or white vinegar
  • Salt to taste

Preparation:

1. Boil potatoes until tender, about 10 minutes. Drain and mash.
2. Using a blender or food processor, grind together the garlic, cumin, pepper and paprika. Add the vinegar.
3. Heat the olive oil over medium-high heat.
4. Add the potatoes and peppers and potatoes brown.
5. Add beer and cook until almost dry.
6. Add the vinegar spice mixture, being careful to cover all the potatoes. Add salt to taste and serve.
