Meatloaf with Vegetables

A fun idea for cooking the turkey dishes, ideal for those who follow a low-fat diets but they love the pleasure of eating.

Meatloaf with Vegetables

Ingredients (for 6-8 people):

  • 750 g. turkey chopped breast
  • 300 g. peas
  • 300 g. beans
  • 300. tomato
  • 200 g. zucchini
  • 150 g. carrot
  • 1 shallot
  • 1 egg
  • 20 g. Grated bread
  • 20 g. flour
  • 1 sprig of marjoram
  • 100 ml beef stock
  • 50 ml dry white wine
  • 30 g. butter
  • 20 ml of olive oil
  • 20 g. salt and pepper salt

Preparation:

Boil 2 liters of water with salt, pour shelled beans for 15 minutes, drain and cook the beans in the same water, also for 15 minutes, check if they have been washed and, once cooked, drain and cut into parts.

Wash the carrots and zucchini, cut into strips and cook. Wash the tomatoes in the same water peel, remove seeds and cut into cubes.

Place meat in a large bowl, add the vegetables, egg, salt, pepper and breadcrumbs, then stir until the mixture is firm and smooth.

Peel and chop the onion and saute for 1 minute in a pan with oil and butter, add the meat loaf and let it brown for about 5 minutes turning frequently. Add wine let it evaporate, add broth and simmer covered for 50 minutes. If necessary add a little hot broth during cooking.
