Even in winter, it is difficult to find mushrooms, which are
a mine of valuable substances for metabolism and to provide vegetable proteins
(similar to those of the legumes), carbohydrates, lipids, minerals (including
calcium, phosphorus, magnesium, silicon iron, copper and manganese) and
vitamins (A, B1, B2, C and PP).
The mushrooms contain enzymes
and odorous substances
responsible for its unique aroma, pigments, resins and good amounts of fiber,
useful to keep the bowels active.
Fungi are also
the focus of numerous studies that have demonstrated the immunostimulating antiviral,
antibacterial and whose ultimate effect of speeding up the metabolism and their
ability to "burn" fat and calorie s. Among the substances that would
be responsible for these effects, there is chitin (fiber anti-constipation) and
eritadenine, an amino acid capable of reducing levels of triglycerides in the
blood.
In addition, a study at the University of Arizona has
highlighted the importance of mushrooms for their content of antioxidant that
may reduce the amount of lipid that accumulates in the walls of the arteries.
