Turmeric, also known as Indian saffron, a spice with a nice
golden yellow color, curcumin produced valuable, rich in minerals such as
calcium, sodium, iron, magnesium, phosphorus, potassium, manganese, selenium,
vitamins B1, B2, PP, C, E, K and folic acid.
Very important is also the presence of bitter oils that are
capable of stimulating the formation of digestive enzymes.
Furthermore, several studies shows that, curcumin may be
useful to counteract the occurrence of various types of tumors. In fact, in
Asian countries and especially in India where turmeric consumption is high, the
incidence of cancer is very low. However, curcumin also has an effect
antioxidant.
The chicken, by contrast, is an ally of the diet. White
meat, in fact, the protein is remarkably high.
Ingredients for 2 people (1 serving equals 385 kcal)
- 400 g of chicken breast pieces
- 400 g of potatoes
- 1 teaspoon chopped onion
- 3 tablespoons plain yogurt
- 1 teaspoon curry powder and 2 turmeric
- 1 tablespoon olive oil
- sea salt and parsley
Preparation
Boil the potatoes with skin for 20 minutes, then peel and
cut into pieces. Heat oil in a skillet and add onion, stirring to prevent
drying, add the curry, turmeric and mix well.
Add the chicken pieces, stirring to brown. Then pour the
cooking vessel potatoes into pieces. Season with salt, pour a bucket of boiling
water, cover and simmer for 15 minutes, stirring frequently.
Finally add the yogurt, mix well and cook for another 5
minutes. Remove from heat, sprinkle with chopped parsley and serve with
vegetables cooked to taste.
