Light recipe: Cannelloni filled with soy


The cannelloni stuffed with soy are a very tasty dish, a great source of vegetable protein, ideal for those who are struggling with a weight loss program. This recipe, thanks also to the isoflavone content of soy, is especially indicated for premenstrual syndrome and menopause.

The soy isoflavones, in fact, regulate hormone balance, both in terms of excess estrogen, as occurs during premenstrual syndrome, or in short supply, as occurs during menopause, including the relief of classic symptoms, such as hot flashes. In addition, soy is one of the foods with the highest concentration of isoflavones.


Ingredients for 2 people:

  • 6 pancakes for cannelloni
  • 2 carrots
  • 2 stalks celery,
  • 150 g of soy low
  • tomato sauce
  • 1 small onion
  • 1 tablespoon extra virgin olive oil


Preparation: Boil the cannelloni in boiling salted water, drain underdone and cool in cold water, then put it onto a towel. Meanwhile, saute onion, chopped celery and carrots in oil, add ground soybeans (which must be rehydrated according to package directions, usually soak for half an hour). Cook for few minutes, then add 1 tablespoon of tomato sauce.

Slowly add the hot sauce and used the plant to fill the cannelloni. Place in a baking dish and top with tomato sauce. Bake for 15-20 minutes, then serve. Depending on your preferences, you can also sprinkle with some grated Parmesan cheese.

If you are allergic to soy, you can change in a very simple recipe, replacing soy with the same amount of wheat gluten, a protein food high and low in fat, gluten from wheat or other grains such as kamut and spelled, which recalls the appearance of the flesh, but the flavor is more delicate and its consistency is softer. Among other things, seitan is also useful against cholesterol, clearly not recommended for people with celiac disease.
